Deer jalapeno-cheese sausage...what to do with it for a crowd?

I found a nice Spanish tortilla recipe that I’m going to add some cooked sausage to and make as more of a strata (in a baking dish, vs a frying pan). The recipe is pretty simple (eggs, onions, potatoes, olive oil) and I can’t imagine adding sausage to that is going to be a negative!

The final result. Eggs, onion, sausage, salt, olive oil, and I threw in a cup of half and half because it seemed to want it. Baked at 350 for an hour. It was great! We only had one piece left over, and I just ate it this morning.
