Question for the crowd. Has anyone dehydrated mushrooms for long-term storage? I see guidance for a small dehydrator at 135F (we have one) and for a sheet pan in an oven at 170F. Any comparative experience?
I never have but I just bought a large (12 oz) container of dried mixed mushrooms at Costco (Ocean NJ) for $12.99. It has a mix of yellow boletus, portobello, oyster and porcini mushrooms. No added ingredients… The best buy date is 12/22.
Thanks. We use Sam’s vice Costco (much much closer) and they don’t stock dried mushrooms to my frustration.
We’re still getting a lot of product out of our small herb garden. Herbs and some grocery store fruit is keeping our dehydrator running most of the time. Thinking about mushrooms as more shelf stable foods for storage.
I’m going to have to build shelves. grin
We have a great mushroom vendor at our nearby farmers Mkt. Beautiful large shiitakes that I now have 2 quart jars that I dried in an excaliber dehydrator. They don’t seem to discolor or degrade. What I did discover was that older mushrooms that I had for a week or so in the fridge smelled fishy when dehydrating. Really fishy. Apparently that’s a sign of old mushrooms. Nasty, got rid of that batch.
I just happened upon the mushrooms yesterday when I was there. I know I’ve gotten them in the past but it’s been a while since I saw them. I think it is a seasonal item. Maybe that’s case at Sam’s?
I’ve toyed with the idea of getting a dehydrator but I think it will end up in the garage next to the ice cream maker, bread machine, waffle maker, and larger hand mixer.
I’m with you on all of those appliances @MsBean ; but we do use the waffle maker every Sunday
Maybe. It could also be that seasonal items don’t get on the website. We are 100% curbside pickup ordered online, so if something isn’t on the website we don’t get it.
I used to use the waffle iron much more when I had to make lunches for school. One of The Sprout’s favorites were waffle sticks dipped in yogurt.
I don’t dehydrate with intention, but some seem to dehyrate in my fridge, while I’m figuring stuff out. These were bought fresh from my CSA about two weeks ago, kept in the refrigerator, and are, as my husband would say, “dry as chip”. No smell/aroma.
I think they are/where shitake, but I don’t remember.
I also have these, on “sale”, same age, still moist.
Let me know if you ever want to experiment with a dehydrator. We have one and don’t use it often. We have a waffle maker that my dear great aunt gave us as an engagement present and I love to send her a message or call her every time I use it.
