Cooked vegetable starter for Christmas dinner?

Thanks so much, everyone! I appreciate all of the suggestions. MIL has had ‘IBS’ for years and tried many different diets with no luck. And now I’m thinking it might have all been diverticulitis flares… she generally eats a low fiber, high red meat diet which is a trigger. Looks like the high fiber/low fiber thing is inconclusive and I wonder if this is an individual tolerance thing.
Right now I’m thinking of some kind of antipasto with pickled vegetables, olives, marinated artichokes etc. I also like the shrimp cocktail idea or mozzarella and roasted red peppers. Thanks for your ideas!

Well tbt, after living with mis-diagnosed gastro issues for over a decade (its IBS, no, its this, no its that, do the FODMAP, effing etcetera), a new gastro (I had been through 4 of them, a revolving door) ordered an endoscopy along with the regular colonoscopy. Ta da! Ulcers, one particularily nasty one in the duodenum, which led to a botched surgery (removed 1/4 of my stomach, too) and then a year later, a new surgeon who ran a gastrin blood test. As he suspected, liver tumors, lots of 'em. He cleaned me up and fixed the botched mess (more stomach had to come out— not cancerous, just mis-aligned from the first surgery) from the previous surgery. Almost 2 years later, the tumors have returned and I am going through chemo to retard their growth, since surgery is not recommended now. What an effing rabbit hole! Be persistent, be that squeaky wheel, be your own advocate!

Definitely! Also, I find that it’s very useful to take someone with you to the consultations; you are bombarded with so much information that it’s hard to follow and remember everything (speaking, of course, as someone who has no medical training.)
