Yes, I too just collapse at the dinner table in my kitchen work clothes.
My 12.5 Butterball looked brown and perfect but everyone forgot to take a photo. Dinner was at least an hour later than I expected.
Per Woks of Life recipe, I turned the pan around every
½ hour. When I thought it was ready, I took it out to test with thermapen. One side was done, other side no. I kept putting it back in the oven, taking out and testing. That one side wasn’t increasing from 160 in the thigh. Finally it was done and resting.
I’m not experienced at making gravy and this time I was trying Wondra. Two guests were hovering, making me nervous, I had to let them know I needed to be alone in the kitchen to do this in peace. Came out fine. I’ll use Wondra from now on.
I baked my stuffing an hour, per the recipe but it wasn’t long enough. Next time I’ll bake ½ way the day before.
Sounds like it all came out alright! I’m terrible at ad hoc gravy myself — always have trouble defatting the drippings, etc., so I often make it with the neck & giblets in advance.
The sad part is, I took that photo of myself this morning…ie, I am wearing the same food-smell laden clothes today.

Oh, and the lemon chiffon pie. It was more like lemony, eggy Jello despite my best efforts not to deflate the meringue. I think it would be better with less gelatin and folding in some whipped cream.

I used a knocked-together recipe that is basically just latkes, only you salt and drain the shredded potatoes rather than soaking them in water and separating out the starch. Happy to provide it if you like.
When I used to make gravy, I would channel my late FIL who was a master gravy maker. You’re welcome to borrow him. He was a really nice man, and his name was Rich (not short for Richard - just Rich). My gravy was always perfect!
