China 2026: Zhongshan - Crucian Carp Five Ways

We love almost all types of properly prepared seafood, especially the unique specialty of any region we are exploring.

In Zhongshan, that special fish is the CRUCIAN CARP. Reknown and cherished for its CRISPY Clean Flesh. The fish is precisely husbanded, raised in nearby pristine mountain water and fed a diet mostly of Broad Beans. This diet results in firm tight meat, unique to this fish.

Our CRUCIAN CARP SET MEAL started with FISH BELLY in BLACK BEAN SAUCE. Rich unctuous SNAPPY belly in a light Fermented Black Bean prep.

FISH BALLS into the boiling pot for a ten minutes bath.

We both marveled at the texture and bounciness of the fish. No mystery why this particular Fish is famous for the area. The meat was tight and for lack of better word, CRISPY.

We are in town for 4 nights. Planning to enjoy at least a couple more places for comparison.

At our house, growing up, we’d always fight over them, unless one of the elders was there. We always deferred to them out of respect. #BecauseChinese
