Chef Frank Japanese Cuisine [Natomas, Sacramento]

It’s my birthday today, so this past Wednesday I went to try a new sushi place. Chef Frank has been around a year or two and has distinguished itself as one of the few alternatives to local institution Kru for a fancy night out of excellent sushi.

I mean, Kru and Frank aren’t like going to Nobu or anything, but all the fish is uniformly top notch. So far as I know, most of the better sushi places in town all source their fish through one or two local sources. So at this price point, you can match ingredients, so you’re basically competing in service and maybe creative prep. The staff here is polite, attentive, and helpful. On to the fish:

Sashimi Mix. Abacore, O-Toro, salmon, yellowtail. All were excellent, the the O-Toro was especially decadent.

Yellowtail collar, grilled and crispy, just a tiny bit smoky, clean delicious fish. Served with a ponzu sauce.

Ocean trout, topped with a mushroom/truffle duxelle, O-toro with a dab of very creamy caviar, uni

All excellent. Really liked the little bits of dressing up on the trout and tuna. And the unit was perfect and creamy.

Franks offers an Omakase service on Fri and Sat, two seatings per evening. Cost is $125/person, which is well within “going out for a treat” range.

Gonna have to remember that.
