I included my recap (with photos) of my recent dinners in Champagne on my Medium page: https://medium.com/reserved-by-sarah/three-days-in-champagne-884ab2d9339d

L’Assiette Champenoise — Michelin three star with high acid French dishes and a great wine pairing

This restaurant earns its three stars — each course was creative and tasty, the servers were attentive and warm, and every detail was thoughtfully considered. My favorite courses were the crispy tart with shellfish emulsion and the bright green aspargus, but there wasn’t a bad dish in the lineup. All the dishes were high in acid (which matches my preference for bright flavors) and paired beautifully with Champagne. I highly recommend splitting the wine pairing with your dining companion — half of a 5-glass pairing is plenty of alcohol, especially if you also get a glass of Champagne while you enjoy the first bites in the garden — and it’s an interesting lineup of local wines. I was nervous about missing out by opting for the smaller tasting menu, but we were full and sleepy by the time the time meal ended, so I think it was the right choice.

Le Royal — Solidly good but not great Michelin one star

This one star was at our hotel, so it was an easy option for our last night. We had eaten at L’Assiette Champenois the night before, so we naturally kept comparing the two restaurants. It may not be totally fair to compare two restaurants with such different ratings, but their signature menus are about the same price. While our meal at Le Royal was good, it really paled in comparison both in flavor and atmosphere. I would eat here again if I was staying at the hotel, but I would probably skip it otherwise. If you do eat here, I would recommend ordering a la carte and including the Brittany lobster in your order.

Le Bellevue — Casual hotel restaurant with the best terrace view

The main event at this restaurant is the view, not the food. The food was hit or miss — the pea soup was excellent, the salad was too big for an appetizer, and the fish entrees were overcooked. If I went again, I’d order the soup and one of the comfort food options from the bar menu. However, the view is a guaranteed hit! Make sure to visit when it’s warm enough to eat outside, request a table on the terrace, and arrive before sunset. I could have happily sat there looking at the rolling vineyards, sipping Champagne, and snacking on bread and olives for hours.

Thank you - great report. A few years ago we did have a nice dinner at Le Royal but we did order a la carte and we did stay at the hotel. Similarly Le Bellevue food was hit or miss and unfortunately it was raining, but I also recall their soup being great and the rest of it not so much.
