I’ve never made it, but I’ve sent this thing to my email at least twice in about 18 months, intending to.

Whether his actual product is worth its salt, I can’t say, but it looked like a very interesting process and I like his approach on this channel (he’s rather more boisterous on some others).

Skimming actual recipes I’ve told myself that I’d use this video for visual inspiration and the SE/Kenji recipe you’ve already linked for specifics (assuming I can source the foie gras). Particularly in areas new to me, I tend to trust his stuff. F&W for brand new things, too, as it turns out.
