Those look great! What sort of recipe do you like to use? I’ve never had good luck making tortillas; they always come out on the dry side.
Regarding self rising flour, I use it very frequently, this is a mini Irish soda bread, just a generous cup of SR flour.
Besides biscuits and scones, I use it for pancakes, waffles, muffins and cake. There are a lot of UK and Australian recipes that use SR flour in many ways.
I use this recipe and (slightly) modify it adding some Cayenne Pepper for a bit of a kick. I also quadruple it and make 12 tortillas up. They are delicious and don’t stick around long.

I am serving a holiday meal Sunday, including cabin made bread.
I printed several recipes and thought I used the recipe you posted, practicing during the week.
It can be difficult to source ingredients at the cabin.
I do not know which of the several recipes I used….I wanted to thank someone and picked the recipe that looked used because of stains. I guess I took offense with your hydration comment…Now, I understand your comment.

I may have found the recipe: 500g flour 375 g water, 1/4 t yeast, 2 t salt 1/4t sugar.
