The only challenges I have with halving are eggs (as already noted, but easier by weight) and the odd fractions that require multiple measuring spoons, like half of 3/4 is 3/8 which means 1/4 and 1/8. But practicing fractions isn’t a bad thing!
And should be easier for a 12 yo than it is for us
and halving in grams is easier than measuring 1/8!
Was not familiar with Practical Kitchen or Dessert for 2, so thanks for the info.
If I can’t bother to “ exactly” halve the egg, I just use the yolk…close enough. I frequently make meringues or other treats with the whites, so don’t mind having them.
That’s my strategy.
@riley, all the recipes in Snacking Bakes are designed to be baked in either an 8" square or a 9" round pan, and since they almost all for 2 eggs,they can easily be halved to go in a 6" round pan.
Most of the cakes I make are 6-inch or smaller because it’s two of us and my mom TRIES to watch her sugar. Even then I manage to have enough to share with neighbors. I halve or third recipes regularly, but I also make a lot of recipes off YouTube, which are already smaller cakes (typically 6-inch). Weighing makes reducing recipes much easier since things like eggs can be measured at 50 g, so half is just 25 g, though I often choose how to reduce based on egg content (so I might make 2/3 if there are three eggs in the recipe). And I sometimes use just the yolk, or sometimes I have extra whites and add some spoonfuls of whites to a yolk.
My most-used pans are 6 and 7-inch rounds and squares and adjustable ring molds.
Of course you need to buy her the cutest apron you can find!
I think that this is a wonderful idea, and I’m sure your niece will love it. As someone who was the librarian at a private school where many of the parents forbade sugar, I’m hoping that you aren’t going to get in trouble with the mom. Or if you don’t, will she hassle your niece when she bakes? I’ve heard so many moms bugging their kids about the evils of sugar, so
i just worry. And what I noticed is that the kids whose parents were most vehemently anti-sugar, were the ones who were most obsessed with desserts and candy!
Not trying to be a wet blanket here, but it makes me sad to see kids’ enthusiasms dampened by prejudiced adults.
I will usually then convert to ounces ie:half of 3/4 is ? so 3/4 =6 ounces therefore
half = 3 ounces,which is 1/4 + 1/8.
That works with cups but not spoons!

Coffee measuring spoons are usually 2 tbsp ie 1/8 cup — I use mine a lot!
