Hmmm. Too sweeping. Food can represent (ethnic) culture but on a broader scale, food represents the American Dream culture. I see plenty of Latino folks eating at Taco Bell, Pizza Hut and yes, Olive Garden. Too us, authentic means what we didn’t grow up with, but that too is false simply because by being here the food gets Americanized.
When I have family and friends visit from London and Germany, all they want to eat is Mexican food. The Australians like “authentic” American bbq , and Korean friends like fried chicken. I’ve never taken anyone to a chain restaurant, or have had foreign guests request we go to one. They just say the kind of food they want to eat.
