Aldéhyde is a new (opened 27 August) gastronomic restaurant in the Marais, very close to the Seine. The meal I had last Saturday was highly impressive. My report is here.

Thanks, as always, for your excellent, informative updates. Those look to be some beautifully rendered dishes with interesting flavor profiles. Adding this to my list for my return to Paris next summer!

Funnily enough, I had poked my head in here before leaving Paris last week with a friend and decided would try soon as it is so close to “home.” Thanks for taking that plunge! Looks interesting to me, and even more so now!

Liked especially - the dish lamb and eel. I’m looking for a restaurant for a birthday meal for the coming weeks. The meal looks good, but maybe a bit too vegetal for the carnivore birthday boy. But will keep the address for future.
