Looks great. Have you ever tried Okroshka? That’s a buttermilk/ kefir/ yogurt based soup that uses cucumber and often dill, but not beets.
Or Finnish Rosolli? That’s a beet, apple and potato salad that often includes dill.
I make a lot of variations on Borschts, beet soups and beet salads with dill, as well as cucumber and dill salads and soups.
I don’t usually combine my beets and fresh cucumbers, but I have made Slavic salads that use dill, fresh beets and cucumber pickles.
This Rossoli salad calls for beets and cucumber pickles.
