In my sunday chat with my parents mom mentioned chinese chicken salad (which they have literally been ordering from the spot near my dad’s office for decades). And then that was all i wanted.
My (chickenless) version for dinner included nappa cabbage, cilantro, green onions, toasted sesame seeds, crushed “healthy” ramen noodles, smoked tofu, and a sesame soy rice vinegar dressing. Really hit the spot.

My stepdaughter arrived yesterday for her summer visit, and we went to the parade and street fair to celebrate Pride in NYC yesterday. A lot of fun but HOT!!! By the time we got home, we were worn out and wanted something that wouldn’t heat the kitchen or require a lot of cooking. I had some braised pork belly in the freezer, so I pulled that out and crisped it up with a glazing of maple and Sriracha, and then made some decidedly NOT diet-friendly but delicious cold sesame noodles. I added a bit of white miso to my usual dressing on a whim, and it really worked to add an extra salty, umami kick without disturbing the flavor balance the way extra soy sauce can.

I just checked and the original dressing recipe calls for 2 T. sesame oil, 1 t. soy sauce, 1/2 t. kosher salt and 1/2 t. sugar for 4 c. of cilantro and 1/2 c. of peanuts. No vinegar. However, having made it the way I did, I have a feeling I would find the recipe as written too oily. YMMV.

that totally has to happen in our kitchen! i was just telling the BF the other day that i believe we buy/use more cilantro than any other herb. sounds great! yes, please, if you get the “official recipe”, please post!

Wednesday last week was bbq chicken wrapped in bacon - made the bbq sauce with a little TJ’s bacon jam, along with chipotle, apple cider vinegar, smoked paprika, other bbq-saucy things. BF made the potatoes, they could have used a tad more crisping. Chicken was good, but not a wow.

Thursday the BF made a slider with a tiny piece of bacon and melty-mexi cheese, and his fries. and a big salad with his BC dressing. the burger was extra delish and super juicy.

Friday i had a late lunch/early dinner with out-of-town friends - burgers, charcuterie, a salade nicoise, cocktails. and for dessert a gift from Pike Market in Seattle that they brought me - this amazing lemon curd yogurt that tasted like the richest cheesecake filling ever.

Saturday we went to a bbq at Stinson Beach with the BF’s family: tri tip (we brought some too), my frenchie potato salad & chimichurri, and boxed sangria (my new fave - Beso del Sol). there were also oysters and mussels on the grill, chicken, corn, zuke planks, and tomato boats with pesto and cheese. lots of really good booze, too. and it was just a stunningly gorgeous day.

Sunday went to a George Clinton/Parliament outdoor concert and danced and snacked in the hot sun, then afterwards went out for duck tacos and cocktails.

and tonight: tacos, cuz 3 times in a week is the charm! BF made them with leftover tri tip, his mexi-rice, guac, and pureed black beans. the rice was killer. i taught him how and of course he now shines at it.

out tomorrow night again, same place i went to Friday! yep, it’s that good. happy Monday/almost Tuesday, everyone!

(oops, the third taco was my bfast taco - sauteed fresh corn in butter, with onions/cilantro/bird chili, scrambled egg, queso fresco. yum.

WFD - CSF Yellowtail Flounder fillets from the F/V Catherine F.
~ Fish Fillets Pizzaiola. We love this method of cooking fish fillets or boneless chicken thighs. Basically it’s exactly what one would do for a Margarita pizza, using the fillets as a base. Tomato sauce, grated Parmigiano, fresh basil. I like to add a slices of mozzarella too, not the Bufalo but the other kind. Tonight we’re using a cup of the magnificent Amatriciana sauce G made last night instead of fresh tomatoes.

~ Potato, Green Bean, Tomato Salad from Italian Two Easy: Simple Recipes from The London River Cafe. Potatoes; chopped tomatoes; green beans, S & P, red wine vinegar, olive oil. Recipe calls for boiling the potatoes and beans but I prefer to steam them. Also, I add a julienned basil shower over each serving.

Downloaded “My Fit Pal” app, after a year of dieting and 6mos. of ever increasing gym work, I’m looking to switch things up a bit.

Simple grilled chicken and mixed beans with carrots. According to My Fit Pal App I’m short 1,000 calories on my daily intake! Interesting…

No cooking on Tuesdays since the house gets cleaned. I stopped on the way home and got two sandwiches, turkey brie and Italian. Sides were chips and wine.
