Hmm … I think wine is a whole art! For each dish, you have to choose a specific wine, so I cannot single out just one specific taste. I don’t know much about dessert wines, so I can’t say anything about them (usually my wife chooses them). If we talk about my choice, then I really like shiraz. Great wine to use with meals. We have a small collection of wines in our family that we use both on ordinary days and on holidays. I even had to buy a wine cooler in order to keep all our bottles. 2/3 of the entire refrigerator is occupied by my red wines. The rest of the bottles were chosen by my wife. It is mainly white wine. We still have a little free space, but I think that after reading this article, the free space will end 
I forgot to write that I even had to purchase a separate wine cooler (something like this https://www.foodieandtours.com/best-built-in-wine-cooler/) in order to store all our bottles. I think this is one of the most useful things that we bought lately

How was it? I’m cellaring 2004 magnums and haven’t tried it in a long while.
Celebrated a birthday dining outside No 9 Park in Boston with a bottle of Movia Puro, a Slovenian sparkler that is shipped undisgorged. They disgorged it tableside in a bucket of water, inverting the bottle and wrenching the cork off with something that looked a bit like a tire iron. Sitting on the lees that long it certainly had that toasty character - really a delightful wine.
