What constitutes the “surprise”?

I once had housemade rhubarb jello at a small cafe. It was pretty, tasty, and refreshing.

Sounds like you broke the emulsion of butter and liquid.

That’s what I was thinking. Unfortunately, I transported the icing to a location where I didn’t have access to a mixer, and hand beating wasn’t doing the job. I’ll remember the hair dryer trick next time too!

If you are referring to the “Rhubarb Surprise Pie”… it’s a packet of strawberry gelatin.
