A few years ago you sent me a recipe called In.The.Chips from a cookbook called Slice and Bake. They were a favorite with my husband. I think I should revisit the recipe!

I’ve made classic lemon meringue pies, and as much as I love a big project, this is too big of a project for me this weekend. And I need to do it this weekend. Also, the pie doesn’t keep well, so I’m looking for something smaller. Like, something I can make in 2 or 3 individual ramekins?

So: have you ever made a less-intensive dessert with a similar profile (lemon and meringue)? The crust element is not as important.

That looks like it’s perfect for what you are looking for, RLB always reliable. My only switch would be a Swiss Meringue which I prefer to make rather than an Italian.

I prefer not using a hot syrup, I’d rather heat the whites with the sugar over simmering water until 145*/160* and then beat with mixer.

I use the swiss method when making my macarons. Following Pie and Tacos instructions I dont even use a thermometer. Just heat the egg whites and sugar over simmering water until I dont feel the grit of the sugar. Next time i will take the temperature to see if it matches Nannybakes.

That is also how I make my meringues, 145* for meringues, 160* if it’s only going in oven for a quick browning or being torched.

Also in search of a recipe: I’m looking for a stamp-able chocolate cookie dough.

Anyone have any favorites? Here are a few that I found:

The best stamp dough I’ve tried happens to be a choc gingerbread one. Could leave out some of the gingerbread spices to make it more chocolatey . They are tasty though.

I only bake frosted cakes for birthdays. It is my son 's birthday. A Double-Decker Salted Caramel Cake. Bakers on EYB commented that baking time was about 20 minutes longer than suggested time and so it was. I also made the caramel sauce recipe in this book. Icing is simply icing sugar and caramel sauce. Decorated with toffee bits and chopped chocolate. Recipe from Baking with Dorie. My icing skills are limited, so Im happy.
