Thank you both, it was a hit! I’m so happy she was happy. She declared it the best birthday and the best cake ever. Lol. I got off easy. Unicorn presents helped.

Couldnt be easier. Recipe is Easy Bread Machine from King Arthur’s. See breadmachine on dough only and when dough is ready shape it to fix my 13x4 pullman pan. Bake at 375 for 25 minutes, lid off bake for 20 more minutes.

Raspberries, pistachio pastry cream mini tarts today, they are only 3 x 1/2” so are perfect for individual servings. I had scraps leftover from some tart dough and used them for these tarts. Pâte sucrée, blind baked, took only 10 minutes or so, and I had the pistachio pastry cream already made up. Calorie control😂

I would have to make four then, no problem! I think I should make extra dough to allow for a greater volume of scraps. I had some extra tomato flavored dough that I used for mini mozzarella tarts with the tiny Sprinkle tomatoes, pinch of fresh herbs, evoo…made a hit

Albanian Cheese Triangles from Hot Bread Kitchen. Thin unleavened dough wrapped around a mixture of feta, egg, olive oil and milk and baked. The dough was hard to roll out to 3-12” squares despite repeated resting. I ended up making 9 and one mini. They weren’t as tender as I’d have liked but the filling was delicious and they were a great accompaniment to turkey barley soup.
