Wish I could send samples! The recipe was adapted from Blackberry &Hazelnut Frangipane on the website Little Loaf, this was half.

Ive been trying for ages to chocholate mold my madeleines. Sometimes with success and most times not. Finally gave in a bought silicone baking pans. After the madelines were baked the molds were spread with chocolate, madeleines placed on top and into the freezer for 20 minutes. They just popped out. I am so happy with my success.

No I’m not sure what the bagel boards are used for. I add some honey to the water that I boil bagels.

Sometimes the right equipment makes a big difference!

Bagel boards are soaked and give off steam from the burlap for the first part of the bake. then the bagels are flipped and baked on the pan.

I love these! I tried Madeleines once, they were nice of course, but these are so appealing to me! Not ruling out white chocolate either, which I like.

Interesting. I found the recipe I use during Covid (wanted bagels but not going to places we used to buy them) and have stuck with it. When I make brioche buns I put a pan of water in bottom of oven that emits steam when they’re baking.

Yes, i was thinking of making some white chocolate and dark chocolate covered madeleines to a potluck I’m going to. Would love ruby ones but the chocolate is too expensive for my pocket. Oh maybe Ill put a few drops of red in the white chocolate.
