why do guidelines say not to refrigerate?

You are converting starch to sugar during refrigeration and thereby change the flavor (sweeter) but more importantly the increased sugar levels increase the chances of production carcinogenic compounds like acrylamide

I know the FDA goes currently through a tough time thanks to MAHA management and people don’t trust them anymore but they have done a lot of great work over the decades including on acrylamide levels, also in potatoes and so it isn’t fake news

I freeze a lot of potato dishes – is that safe??

Do you freeze raw or cooked/blanched/roasted potatoes ? Raw potatoes aren’t good for freezing because of the water content which will make them mushy (and you also make them sweet due to the starch conversion). Cooked potatoes are OK

Also, storing potatoes near tomatoes or onions (inside or outside the fridge) could accelerate spoilage as they both produce ethylene.

Our Dutch friend has an antique wooden potato cabinet/ bin where she keeps her potatoes in the kitchen, although it would probably be even better suited for the basement, cold room, or mud room.

Tupperware makes a small one

i seem to be good then–the thermometer in the frid reads a consistent 40⁰ f

This is approximately what I do. I have a small standing corner 3-level black wire standing basket thingie (yet another Home Goods purchase!) on the stairwell going down to the basement. There’s a door to the main living area, so the stairwell stays cooler. It would be better if I had the basket stand at the bottom of those stairs, as it’s always much cooler down there, but having it just a couple of steps from where I open the door is more convenient.

I had to run some errands this morning (on my bicycle). I was almost afraid to look as I passed the local gas station.

Yep – $4.99/gallon. I really do feel sorry for those who have to commute to work.

I think it was about 20 years ago when gas was hitting $5-$6/gallon. I was riding a motorcycle to/from work back then (getting about 55mpg). I pulled up to a pump and put in $10, the guy in front of me was in a large SUV (he was pacing as his truck was filling up) - He walked down and glanced at my total purchase and exclaimed $10 – I just put $110 in my truck.

Amazing at the differential around the country, but I know it’susually more expensive out west. I just noticed my local station go up to $3.69 from last night’s $3.49/gallon. Up from $2.53/gallon on Feb. 27th.

So in 22 days, the lowest priced gas in my area has gone up $1.16/gallon. Completely and utterly pointless and uncalled for.

I have been finding Tupperware at Marshalls and Winners lately, in case you want to check Marshalls or TJ Maxx for cheaper Tupperware :slightly_smiling_face: (have not spotted a tater keeper )

$5.89 for regular, $6.19 for premium, at the Shell station down on the corner here. I grumbled when I filled up at $4.69 just before the Iran assault.

Regular Unleaded was $1.69 CAD/litre in Toronto today. I paid around $1.89 CAD / litre for 91 octane today.

Lots of memes joking about a $2
/ litre summer.
