My grocery is having BOGO sale this week, so I stocked up on quite a few items. My receipt said my savings were exactly 50%.
Thatās great ā I see the occasional BOGO sale, but not that often here.
This Friday is a $5 sale at one grocery store. The cottage cheese, cream cheese and sour cream are 3 for $5 ā so I might grab that deal and see what I can do with that.
I know I have a single large chicken breast in the freezer, so maybe Sour Cream chicken enchiladas ā Iāll have to make my own tortillas, but Iām getting good at making those (Practice makes Perfect).
I know I have some ābibs and bobsā of various items in the freezer, so Iāll get creative.
Then you have all the ingredients for lentil tacos in flour tortillas with beans and rice!
Great idea!!
Thank You.
A dry pound of beans all cooked up can be beans and rice, refried beans, stew, bean dip. Basically, you have 4-6 meals for 2 depending on what you do!
I did a pound of dry chickpeas yesterday. So far weāve got two meals of hummus and a lunch of rice and chickpeas. Half of what is left will likely be lunch (either more rice or maybe pasta) for Thursday and Friday. The other half will probably be put in the freezer.
Those are great foundations for tasty meals!
Another week with very little on sale ā Potatoes and Ground Turkey. I picked up two 1 pound chubs of ground turkey.
I might try to make āHamburger Steaksā but with ground turkey. And maybe ground turkey burritos or ground turkey tacos??
Sticker shock yesterday at our local grocery store in the NW Rockies.
The produce section was pretty much cleaned out, either a supply chain or transportation issue, I figure. Some of what I purchasedā¦
Artichokes were $7.98 each, not that Iād buy one this time of year
There was a spotty selection of eggs in cartons
Romaine lettuce, $2.98 for a medium sized āheadā
A 5# bag of carrots $4.98
Four pears for $5.23
1 jicama was $3.74
Layās Wavy āparty sizeā potato chips, $5.88
4 croissants were on sale for 50Ā¢, marked down from $5.48
The sour cream I bought was on sale, 24 oz. for $2.98 but 2 days past the sell by date
Somethingās not right in the garden of eatinā.
We do ground turkey tacos frequently around here Also
Meatballs but with turkey
Yes, I have some meatballs in the freezer for quick dinners.
Iām leaning towards ground turkey tacos. Its been a while since I made tacos and I have taco seasoning in stock. I canāt imagine there is too much difference in taste (once you add the taco seasoning)??
I donāt notice a difference and more importantly my kids donāt either.
And now I think we will be having tacos as well. I have some turkey in the freezer. . .
with reports that only 25% of the pickers for the citrus harvest in the Central Valley are showing up for work and trucks sent to California to pick up product are already having their pickups canceled because there is not enough oranges/berries/other product to fill the trucks - i think it wonāt be long before food price sticker shock expands to other parts of the US.
Looks like you have your idea for ground turkey covered. Though your question reminded me that weāve enjoyed tamale pie when I have made that. Ground turkey is my go-to for this dish.
I use an old Joy of Cooking recipe. Luckily the NYT adapted the Joy recipe, so hereās a gift link: Cornbread Tamale Pie. I admit that I have never once prepared the ground meat filling quite as the recipe describes. I have always winged it, just making sure that the filling is spiced the way I like it and moist enough. Have never used broth, either. Iāll usually opt for water and/or more tomato sauce instead.
Great⦠thank you!!
Thank you for the recipe. I printed it out ā might give it a try!!
I sometimes add a little beef base or bouillon.
Good idea ā especially for the āHamburger Steaksā that Sunshine really likes.
Iāve got beef bouillon cubes in stock. I can definitely crush one up and add it in.
Thanks!!
Latest calculation for the past 2 months - $130 per week for groceries and paper products, so averaging 3.10 per person per meal.
Iām not noticing any fresh or frozen produce shortages here in the Midwest, although Iām expecting FL/Texas snows and freezing weather and Calif. fires will soon translate to higher fruit & veg prices. Eggs are also fully stocked, just pricey.
Itās gonna get worse.
