I chop grilled chicken thighs for mine. I grill a big pack of them about once a week, use some, and freeze the rest. Right now they are topping a Caesar salad.

For my chicken soup/stew (usually doesn’t have any noodles in it) I grill thighs and breasts and pull the muscles apart to toss in the soup to stew a bit. I like the texture of stewed chicken pieces in a soup and I like the irregularity of the pieces.

The Chicken tortilla soup is better than what I got at Lopez about 4 months ago. BYOT (Bring Your Own Tortillas) - unless they’re deliberately cooked until dissolving completely, there weren’t any in the can.
Corn chowder is worth a try too.
