The Secret History of Risotto

As I hope I’ve already made clear, your opinion would be more informed. If, for instance, I said that I didn’t think a movie was funny, and you told me the director had previously only worked on thrillers, that might change the way I thought about it.

Fun read, thanks! Of all the dishes I have read about and cook at home, risotto comes invested with so many opinions, beliefs, and traditions. When I think about it, that’s a lot of heavy lifting for what is essentially a simple pot of rice deliciously gussied up with stock and butter.

P.S. I agree with the author that Marcella Hazan’s recipes are a great way to get started with making risotto.

Finally had a chance to actually read the article I posted & loved it. Makes me miss AL as the New Yorker’s movie critic even more.

Thanks for the wonderful read! timely, as we are in Milan and will be eating risotto Milanese tonight and leaving for Venice in a couple of days where I had already been contemplating a visit to Trattoria da Romano.
