I have loved pistachios all my life. They have always been my favorite nut. One of countless things my PIC and I connected over was our shared love for pistachio ice cream & everything else pistachio.
I guess that makes me a trend-setter. Slow burn
I have a few sources for Ritter Sport bars here, but they don’t always get the limited-edition ones.
My local European & Middle Eastern market now carries 4-5 pistachio spreads.
I am always interested in hearing about new European/Mediteranean shops - which ones do you like in your area (I think you were located in the East Bay if I remember correctly) ?
Three varieties of pistachio baklava, from the Middle East Market (San Pablo Ave, Berkeley). They had several more, too, along with a few walnut kinds.

I usually go to Crossroads Market in Castro Valley. For Eastern European goods, particularly smoked meat, there’s European Market, also in Castro Valley (they have very good prepared foods too, like borscht). There’s a new Persian market in downtown Hayward, but I haven’t been there yet.

I was looking at Desserts, Mains, and Side Dishes. I OPENED about 50 links; dismissed any that were beyond my capabilities or “too fussy”, and I’ve printed out 12 recipes.
Thankfully BJ’s Wholesale Club sells larger bags of shelled pistachios (although I don’t think they also sell unsalted).

I’m going to have to pace myself. Still having 1 cookie a night with the Pistachio Chocolate Chip Cookies I made. So I’ll go savory this weekend.
And I JUST realized I never posted the cookies I made over the long weekend in this thread!
I augmented with some Italian pistachio cream that I smushed into the center of the cookie as I formed it into a ball pre-baking. Took the full 11 minutes to bake and I got 14 cookies vs the bloggers 16. Soft, chewy, maybe not as pistachioey as I was hoping but still very nice! But OMG, the pistachio cream on its own? Pure freaking heaven!
Pistachio Sicilian style gelato , raspberry sauce. Love this combination of flavors, will try it with chocolate and chopped pistachios next time, maybe a little crunch and then call it Dubai style!
