The Best Instant Noodles

That article is at the website for Myojo, who makes the fresh ramen noodles I love. I get them at Tokyo Fish here in Berkeley, but their website says they’re available at Safeway (and at Berkeley Bowl, but I’ve never seen them there). ETA: I see the website indicates which varieties are available at each store, and the fresh ramen is only available at Tokyo Fish, for Berkeley.

No instant ramen when I was in college, mid 1970s. I think we did have Cup O’ Noodles later in the decade.

They must be good! I bought these today. I didn’t realize “cup o noodles” were fried! I hope these aren’t;

Fresh ramen noodles don’t take too much longer to boil than the instant ones, maybe two minutes. All the instants have too much sodium in the flavor packet for me, and the crisp ones have too much saturated fat. A fancy butcher shop here sells quarts of frozen pork stock, which I portion out and freeze. A dash of fish sauce doesn’t add too much sodium, and I add garlic, fines herbes, and black pepper.
