In Singapore, my fave ones were from Gina’s Vadai

Murugan’s Idli in Chennai had some killer vadais (which they’d serve alongside their idlis) when I was there years back, but its Singapore branch could not reproduce the lightness and crispness of the ones we got in Chennai.
