Update:
It was time for a revisit to the excellent Hainan Chicken Rice Pop-Up from Chef Simon Tan at Marden’s Chicken Rice.
As before, Chef Tan offered up Hainan Chicken with White Meat or Dark Meat, so we opted to get one of each order. Note: Going forward, Chef Tan has announced that all future pop-ups will have just 1 type: Mixed (Half White Meat, Half Dark Meat) Hainan Chicken Rice.

Homemade Ginger Oil Sauce, Singaporean Dark Soy Sauce, Homemade Chili Sauce:
As before, Chef Simon Tan’s trio of Sauces remains a key component and reason why Marden’s Chicken Rice shines so much. The Homemade Ginger Oil Sauce is zesty and spicy, pure grated Ginger and Oil, and it’s a really nice pairing with the Chicken.
The Dark Soy Sauce (imported from Singapore) remains a surprising delight: This Singaporean Dark Soy Sauce has a thickness beyond Oyster Sauce, is not very salty, but is umami, complex and concentrated. A fabulous pairing with the Hainan Chicken meat itself as well.
And his Homemade Chili Sauce remains the same as before, a nice immediate heat, but it dissipates quickly, and it’s not just Chili in this family recipe, but it’s got some nuance that makes it another great pairing with the Chicken on its own, or mixed with a 2nd Sauce (some Chili Sauce and Ginger, or Chili Sauce and the Dark Soy).
As before, to appeal to customer preferences, Chef Tan also includes finely chopped Green Onions, so you can mix them in the Ginger Sauce to create…
Green Onion & Ginger Oil Sauce:
This is definitely my favorite Sauce to use for the Hainan Chicken, a great pairing of Green Onion and the Homemade Ginger Oil Sauce that adds enough of the fragrant Green Onion flavor to the already standout Ginger Oil.
The White Meat Hainan Chicken is perfectly poached again, moist, delicate Chicken Breast meat that is not dried out at all and is just flat-out delicious with the Hainan Chicken Rice itself.
The Dark Meat Hainan Chicken has more fattiness and is juicier, and also just as fantastic as before, supple, meaty, tender.
The Chicken Rice is genuinely infused with great Chicken essence in every bite, such a joy to eat!
Homemade Chicken Soup:
Chef Tan’s Homemade Chicken Soup is just as stunning as before as well: An intense super Chicken-y Broth that feels like you’re drinking a cross between a great Consomme and a Chicken that’s been liquefied and distilled down into a bowl. Outstanding!
For this follow-up visit, Marden’s Chicken Rice continues to shine. We’re glad to see Chef Simon Tan remaining consistent in delivering perfectly cooked White Meat and Dark Meat Chicken for his Hainan Chicken Rice dishes. The Hainan Chicken Rice itself remains this perfectly delicious infusion of flavors, his trio of stunning Sauces are the best pairing in L.A. as well.
And that Homemade Chicken Soup continues to shine, a real eye-opening pairing with the Hainan Chicken Rice as you sip a little of that outstanding liquid Chicken while you’re enjoying a bite of tender, moist Chicken meat with a dab of his Homemade Green Onion & Ginger Oil Sauce, a touch of the Imported Singaporean Dark Soy Sauce or the Homemade Chili Sauce as well. I’m can’t wait to order this again.
