Thank you! I was pretty sure this was the same chef. My wife had a contract many years ago with the state of Tennessee and would go for a week at a time to Memphis, Knoxville, and Nashville to provide training. I would research places for her to eat (mostly on the old Chowhound) and I sent her to Hong Kong House. She said it was excellent, I never got there. The description of the scallion pancakes sounded like something I remember from her visit.
