Milk Street may have jumped the shark

Cooks Illustrated did that with the Silver Palate’s beloved Chicken Marbella - it wasn’t better at all - it was a completely different dish. It still infuriates me when I think about it.

Milk St does it with culturally rooted recipes and regularly makes them worse :joy:

I was being somewhat facetious
As with everything, there are some good recipes
Both Milk St and ATK
And Kimball does get founder’s credit, whether he’s annoying or not

I’m right there with you on his vibe. Early on in ATK, I found his irritability amusing, especially playing off Julia Davidson and Bridget Lancaster. Now, he just seems to be there like he’s officially ‘authorizing’ the dish, as if it wouldn’t count without his approval.

Thats what made this so odd. I looked up the recipes on Dianw Kochilas’ site, and other than some subs (like barley honey instead of hard to find Ikarian honey)it was the same recipe

Milk street must be exploring different revenue streams. Their most recent podcast is “a special episode in collaboration with their sponsor Las Vegas”. It’s essentially a travel piece for Las Vegas - which granted has a lot of culinary options but a promo piece none the less.
