I would suggest starting with Baladin. They are almost becoming world wide but the original spots in Piozzo and Cuneo are pretty great.
Equal in beer quality and greater in location and food served is Birriria Troll about a 45 minute drive south of Cuneo in Vernante. (Vernante is easily reached by train, but you might need a cab to get to the restaurant)
These are both a bit too fancy to wash down a French tacos with, but they’re very high quality and served in casual, comfortable restaurants.
