Yah, perhaps it’s inflation + gas prices + supply chain, etc.? Just guessing at this point. All I know is that Sushi Omakase prices have skyrocketed everywhere since the pandemic (now that things are opening back up again). So it’s not just 1 or 2 “greedy” restaurants.
Even unproven, new Sushi bars locally (no long-term established reputation, no Michelin, etc.), has their Omakase Dinners starting at $250 per person(!). Top places in L.A. are charging $350 - 400.
But we’re lucky. New York’s Omakase is madness: Masa in NY is charging $950 per person for Omakase. That is not a misprint. 
(It’s… insane.)
