I visited three pupusa spots in the Bay Area to eat some of the best in the BAY. I started at Centro Americano in Concord and ha AMAZING pupusas as well as many other Central American dishes. Second pupusa spot I visited was in San Francisco at La Santaneca, where I ate delicious pupusas and plantains. My final stop was in Hayward at Las Cabanas for a giant Pupusa pizza and Birria Bombs.

The apparent collapse of Horn’s BBQ in elk grove (and elsewhere) continues apace-

My spouse has a degree in hotel & restaurant mgmt. He said the business classes were some of the most incredibly boring classes he’s ever suffered through - but added that without them, a would-be restaurateur wouldn’t know how to be a good businessman, as opposed to a good chef.

A chef/owner needs to know how to hire staff, and train them, as well as manage them (an on-going process). The ingredients in every dish, no matter how small, have to be evaluated for “price vs quality” consideration, and the dish priced accordingly after allowing for rent, equipment, maintenance, and staff expenses. A chef must manage the supply chain of every food product used, from the teabags to the parsley and that optional scoop of ice cream for a la mode.

Horn is clearly a good chef, but like all too many, as pointed out, a terrible businessman.

I write up personal restaurant reviews for my own use - we go out to a lot of restaurants, and it’s too hard to remember what we had six months ago when we last visited, LOL. When I look back over 15 yrs of reviews, very few of those restaurants still exist. As we all know, this is an industry where 80% of all new openings fail to last more than four or five years.

This surprises me not at all. From what I can tell all of the best Texas BBQ places that have had longevity have one, maybe two locations. I’ve eaten Horn BBQ a half dozen times and aside from the brisket, the meat has been wildly inconsistent and his fried chicken place wasn’t good at all.

I finally had a chance to try Horn a few months ago….it was good/okay but kind of underwhelming. Took it to go and brisket was dry. Reheating it added moisture but that’s not how it should be. In any case restaurant business is tough and dicey, a lot of stuff to pay attention to at the same time that are completely different in nature but completely connected in making the whole thing work.

I’m confused! I thought the Elk Grove situation was a restaurant called Low and Slow with restauranteur Michael Hargis, and Horn was taking over the space!

From June 30.

How long has it been Horn’s place? How many places does he currently have? Eater is describing “an empire”!

ETA Instagram and this story said it opened as Horn’s on April 26th.

The Lafayette location has been a ghost town the last few times I’ve been by, a far cry from the crowds when they opened. I can’t imagine the whole mess will last much longer if that post is real.
