Chef Verna McGowan has a soft opening for her Calypso Kitchen in the Emeryville Public Market at 5959 Shellmound St.

The Guyanese pepper pot oxtail with yellow rice, peas, and plantains at $24.50 looks interesting.

I took some pictures this afternoon but haven’t eaten there yet.

McGowan’s culinary career trajectory isn’t typical by any means: Before honing her craft at the California Culinary Academy and Le Cordon Bleu San Francisco, she completed a degree at the Fashion Institute of Technology. After graduating from FIT, she worked as a regional sales representative at Levi Strauss, with territories in Iowa and Illinois. After moving to the Golden State, McGowan obtained yet another degree, this time at San Francisco State University where she received clinical psychology training to counsel disturbed and at-risk children. “I wanted a job that dealt with compassion and humanity,” she says.

Our veggie of the day ($8.50) turned out to be an unfamiliar item, yam stems. I wasn’t prepared for their dark-green splendor. Yam stems don’t tenderize to the same extent that spinach does. But the cooks achieved a flavorful braise, finely wilting the stems and leaves. Someone in the kitchen knew exactly when to remove them from the flame.

In San Francisco, Kenny Belov is the owner of TwoXSea and is working on building the city’s anchovy market. Through his process, restaurants are able to get fresh anchovies two hours after they’re caught and on the menu that day.

They caught a big 42 pound salmon in Bodega Bay at the 17:42 mark. Also some ling cod and rock fish.

We still have a viable 1/4 Lb. Giant Burgers in Hayward, on Mission Boulevard near downtown. In fact, it just got renovated and the neon sign was spruced up.
