Started to clean up the fridge and freezer and free space for future cooking / baking. This lamb shoulder was in the freezer for ages. Made lamb confit and couscous tonight. Pumpkin, carrot, onion, zucchini, turnip, tomate, raisin (very important) and harissa, also some beef that we bought for the cat, and he disliked, was used in making this broth. Lamb was cooked separately at 130ºC / 266ºF for 3 hours in oven, with onion, garlic…

Went simple tonight after a very busy week at work…a Frankenchicken BISO breast seasoned with olive oil and Spicewalla’s Honey and Herb Rub seasoning mix…both over and under the skin. (This stuff is really great!)
Into a 400° oven for 35 minutes or so and turned down to 350° for another 15 minutes or so, basting twice.

Well, our county has a very high vaccination rate, but also one of the lowest hospitalization rates in the country (for a populated county), eg, 3x less than LA county. Just about everyone among my set of friends is vaccinated, and also, now, boosted. Our thanksgiving had 20 RSVPs and 18 show up, and I gave everyone an option of indoor vs outdoor, and outdoor was resoundingly approved. So I think we’ll just be Business As Usual for the holidays unless I see hospitalization rates spike. That being said, our friends in other parts of the country aren’t feeling the same way, and various family situations mean we will have less ho ho ho and travel than usual. We will almost certainly do Christmas Eve Fish Feast, and we’ll see about the Cookie Bonanza.

We picked up and put up our tree today with the kids and their significant others. Since tonight officially kicks off our holiday season I felt every one deserved a great meal to celebrate.
Prime ribeyes from Costco grilled and finished in red wine and rosemary. Colossal king crab legs, sides of creamed spinach and sautéed garlic broccoli. Some fresh mozzarella and roasted peppers with mini wedge salad to start.

I had planned on making pizza tonight, but that changed on Friday when the original place I was going to order our Company lunch from was closed, for some reason. Quick last minute pivot to our local pizza place for an order of 6 pies plus some salads. No way I was having pizza again. So I made a light meal to use up some pancetta and spinach for tonight.
A spinach, pancetta, & Monterey Jack quiche using mostly buttermilk in place of heavy cream.
Did a blind bake on a Pillsbury pie crust while whupping up 4 eggs, 3/4 cup buttermilk and 1/4 cup half and half, sauteed pancetta and spinach, grated Monterey Jack, lots of freshly ground pepper and some freshly grated nutmeg.
Into a 350° oven for about 40 minutes (although it could have used another 5 minutes), then a rest for about 15 minutes.
Some red grapes alongside. Well, there were also some white grapes. But those were in liquid form.
