What's for Dinner #10 - 6/2016 - June is Bustin' Out All Over Edition!

I forgot to mention that this years first batch of tomato jam is happening today (I use the recipe from foodinjars.com) and the dehydrator is full of the second batch of piment d’espelette from the garden. the kitchen counters are FULL of various tomato and pepper varieties as well as freshly harvested garlic. Onions are ready to harvest this week… As soon as there is room.

Impromptu after work drinks with a friend/co-worker. I had some sort of frozen slushy mojito situation that was delightful, and strong enough i just had one (gotta function at work tomorrow!). We shared a generic but good enough flatbread topped with veggies thing. Walking to the subway headed home i found a pizza shop with a pile of fresh still warm (!) garlic knots, so obviously i picked up a few and I’m certain the entire subway car was trying to figure out where the wafts of garlic were coming from…!
A quick side of watermelon/cilantro/olives and the knots were the rest of dinner tonight.
No vampires visiting me any time soon!

always impressed with how much you do!

I sold this to DH as BLT pasta. Pancetta, cherry tomatoes, garlic, Parmesan, arugulam and basil. Easy and satisfying after a pretty crazy day (second time in my career I have required a protective sheriff escort to my car after court…ugh). The three day weekend can’t come soon enough.

anywho - a few dinners to post.

Tuesday night out i had the most amazing pork belly and watermelon salad. there was something that had a hint of sesame oil in it too - maybe it was the foam… it was really kind of mind blowing how good the dish was.

Wednesday we went out to a place i’m reviewing, we split a halibut ceviche, super fresh, i had the mussels, and the BF had churrasco (skirt steak) with chimichurri and herbed fries.

Tonight the BF cooked, and it was another delicious pork belly dish. TJs pork belly, seared, and he made a chunky glaze out of TJ’s bacon jam and a little honey for it - to die for! and a teensy weensy baked potato with butter/sour cream/garlic & scallions. and finally, broccolini sauteed with onions garlic, then simmered with a little brandy and topped with lemon zest and parm regg shavings. so bright tasting!

Always fabulous meals, MC!

I’m around. Have not been cooking much or cooking something interesting. Also, the weather has been atrocious much of spring and still is so no point in making photos. I’ve been eating a lot of crab claws, however.

WFD ~ Dinner salad:
Romaine
Arugula
Cucumber - peeled deseeded 1/2 moons
Sweet onion - small 1/2 moons
Tomatoes - chpd and/or grape toms
Assorted herbs - no stems
Taralli crushed as croutons.
Tossed with Gorgonzola dressing.
Tinned tuna, or salmon topped w mayo & lemon jc mixed. (OR sliced cold cuts)
HB eggs 1/4’d.

~ Strawberries. And ice cream??

I believe Harters has left HO because of someone choosing to troll him (as well as calling him a troll, which he most definitely is NOT. I do hope he chooses to return to at least our WFD thread(s), as I dearly miss him here.

No recipe per se but I’ll do my best. The meat was two 6 oz patties of home ground chuck and sirloin. Mostly chuck.

The hummus was made in house as well from dried chick peas.

The spices were a baharat spice mix my grandmother used and fresh ground cumin. I don’t have all the ingredients handy in the baharat mix to list them at this moment

Sweated a shallot (or onion) then browned the meat with a good dose of the baharat spice and cumin as well as a bit of salt. Toasted the pine nuts in the micro and tossed them in after the meat was well on its way

A shredded romane lettuce salad was served on the side

We had been drinking some rum drinks in the pool before dinner and the idea of delivery pizza was discussed. I made this in less time than it would take to get pizza to the door and it was so much better. The hummus I made two days ago
