Which foods were made famous at historic hotel restaurants in Chicago?

I’m drawing a blank.

Possibly at the Palmer House, or elsewhere.

The old Pump Room in the Ambassador East was a photo op backdrop of the celebrity crowd, and a frequent movie setting – North By Northwest, for example. The Pump Room’s photogenic [for those times] dish was flaming shish kabob.
