I didn’t have a problem with mine falling apart. I used a meat grinder to run the chickpeas and all the other ingredients through to make the “dough” before forming the patties

I’ve eaten and made quite a few falafel in my time and I now gravitate to a combination of split, shelled fava and chickpeas. I find that I prefer the texture. I also like some green in my falafel, cilantro, parsley, etc. I lived in Israel and do not recall much green in the falafel there but it was a long time ago so who knows.
